Recipe Number 1             Cheese-Rice Casserole

Ingredients:

Directions:

·         1/3 cup butter

Saute onion in butter, remove pan from heat. Stir in rice, sour cream, cottage cheese, salt and pepper. Layer half of this mixture into a 9 x 13 inch greased baking dish. Spread with half the chili, sprinkle with half the cheese. Repeats layers. Bake uncovered at 375 degrees for 25 minutes


I love this meatless recipe. I usually serve it with a leafy greens and avacado salad with poppy seed dressing and either hot rolls or flour tortillas.

·         1 cup cream style cottege cheese

·         1/2 teaspoon salt

·         1/9 teaspoon pepper

·         12 whole green chili, halved lengthwise
