Recipe Number 1           Redfish on the Half Shell

Dress (or buy) redfish that has been filleted with the skin and scales were left on. Season the fish with your choice of seasonings and drizzle with olive oil, let them marinate for 10 - 15 minutes. Grill the fish skin/scale side against the grill and NEVER turn it. The scales will blacken, the flesh will still be moist. Delicious!
