Recipe Number 1           Breakfast Pie

Directions:

·          4 eggs beaten

 Breakfast Pie

Preheat oven to 350 degrees F

Beat eggs, add a little milk to make fluffier

salt & pepper to taste
 
Break the sausage links up into bite-size pieces and place in pie shell. Sprinkle the cheese over the sausage. Pour eggs over the sausage links in the pie shell. Bake until done (usually about 30 minutes).

Make sure you use a deep pie shell unless you want to clean your oven. Been there, done that, LOL. If you have shallow ones, use less ingredients to accommodate for size of pie shell. Ingredients should fill about 1/2 full to avoid overflow when cooking.

Recipe Number 2            Breakfast Pizza

 I make Breakfast Pizza to eat while we open gifts.
Pizza crust (your favorite) or the Poppin Fresh kind
Shredded cheese (cheddar, jack, or one of the combos)
Crumbled cooked bacon, Sausage, or ham (or combo)
Scrambled eggs
Layer cheese, eggs, cheese and meat on the crust,
Bake until hot and bubbly
You can add mushrooms, onion etc. if you want a brunch type of pizza.

Recipe Number 3            Prime Rib

 My favorite dinner is Prime Rib. Here is how my mom has taught me how to cook one perfectly RARE!


Have Roast at room temperature so it will cook evenly.

Preheat your oven to 500 degrees for 45 minutes.

Place roast on a rack in roasting pan.

Cook roast for 7 minutes for EVERY pound that it weighs. For Example if the roast was 4 lbs. cook it at 500 degrees for 28 minutes (7mins. X 4 lbs.) Then TURN oven OFF. And leave roast in oven for TWO hours and do NOT open the oven door or peek in. After the two hours take roast out and cover it with foil for 15 minutes...then cut and serve. You will get a wonderful RARE Prime Rib every time.

Recipe Number 4               Corned Beef and Cabbage

Directions:

·          corned beef

 Put carrots in bottom of crock pot. Season with salt and pepper. Put corned beef on top and season with package included with meat. Wedge quartered onion around meat. Pour in 1/4 cup water.

Cook on low for 8 hours or high for 4 hours.

Before meal time, dip broth out of crock pot into large pan. Add cabbage along with some salt and pepper. Cook until tender.

Serve all.

If you put the cabbage in the crock pot for 4 - 8 hours, it disappears!!

Recipe Number 5    German Sausage and Potatoes with Onions

·          Potatoes

heat oven to 350 degrees

Line pan with foil...size of pan depends on how much you are making...then spray with Pam type spray

Wash and dry potatoes...how many? How many will you be feeding? I use one good size spud per good size appetite...
Slice thin like potato chips or a gratin thickness...layer in pan...season as you go so all spuds are tasty...I use salt and pepper...some dry chives and parsley are good to add...the garlic power or cloves or slices or are good added now too...
When finished layering, slice the onions thin like the potatoes and lay them on top of the potatoes, breaking the ring apart...
dot with butter/margarine and season some more.
Top with the German sausage...how much is like the potatoes...you know about how much each person will eat...
Cover the whole thing with foil and seal the sides tight...Put pan in oven...cook for about 40 minutes more or less till potatoes are soft...Peal back corner of foil to check...
when they are soft...dish is done...serve hot...but good reheated too...
I like to add baked potato toppings like sour cream and cheddar cheese...after plating...
As you can tell...this is NOT a low fat dish...but good tasty things seldom are...
As you can tell...I don't share this with many people...can't write a recipe to save my soul...

Recipe Number 6                     Bubble Pizza

·          1 1/2 lb. hamburger

In a skillet, brown hamburger and drain. Stir in pizza sauce. Quarter the biscuits and place in a greased 9 x 13 in a baking dish. Top with hamburger mixture. Bake , uncovered at 400 for 20-25 min. Sprinkle with cheese Bake 5 minutes longer. Let cool 5 -10 minutes before serving. Serves 6-8

·          1 15 oz can pizza sauce

·          1 12 oz. tubes refrigerated buttermilk biscuits

·          1 1/2 cup shredded mozzarella cheese

·          1 1/2 cup shredded cheddar cheese

 

 

Recipe Number 7                  Ham-Cauliflower Casserole

Directions:

·          1 medium head cauliflower

Cook cauliflower in salted water just until crisp. Drain, cool and break into florets. Butter a 1 1/2 quart casserole and make alternate layers of cauliflower and ham. Dot each layer with butter. Mix remaining ingredients, except cheese, and pour over casserole. Bake, covered in a 375 oven for 30 minutes or until bubbly. Remove cover, top with cheese and bake until browned, about 15 minutes.

·          Dash salt

·          1 1/4 cups diced cooked ham

·          3 tablespoons chopped chives

·          1 1/4 cups sour cream

·          Dash pepper

·          1/2 teaspoon paprika

·          Dash nutmeg

·          1/4 teaspoon salt

Recipe Number 8                 Grilled Meat

 Cut your choice of meat into bite size pieces and marinate.
Slide the pieces of meat along with different kinds of vegetables onto a skewer. You can fix these ahead of time and put them in the fridge.

 

I have taken ribs and put them in an aluminum pan and poured BBQ sauce all over them and put foil over the pan and cooked it on the grill. I fix it the same way in the oven. It's really good too.

Recipe Number 9                        Baked Pork Chops

·          Thick cut port chops

 I made up the pork in a roasting pan. I use flour on the pork place them in my baking pan with a sprinkle of poultry seasoning and a good sprinkle of paprika then I pour a can of chicken stock over the chops cover and bake at 350 till done about 2 hrs. We had one meal and I made up a bag of noodles chopped up 2 of the chops sauté onion and mixed it all together and froze in 2 sandwich baggies. I also cut up a chop and a half and froze it to make sweet and sour pork and froze the rest of the chops to heat and eat later. The chops are thick so 2 are a meal for us..

Recipe Number 10                    Pork Chops and Stuffing

 One of my favorite things to make is pork chops - brown outsides then place in 1/2 of baking dish - in other half put a prepared box of Stove Top Pork stuffing then cover with a can of mushroom soup and bake!

Recipe Number 11                     Buffalo Chicken Dip

Ingredients:

Directions:

·          4 boneless, skinless chicken breasts (about 2 lbs)

Boil the chicken until cooked (about 15 minutes)
Drain and shred with forks
Preheat oven to 350 degrees
Combine the Chicken with Hot Sauce
In 13X9 pan spread Chicken mixture to form an even layer
**Note - I did spray with Pam and had no problems**
In large saucepan over medium heat, combine the cream cheese and blue cheese stirring until smooth.
**Note - Buy Philly Cream Cheese it seems to melt better!**
Pour the mixture evenly over chicken
**Note - I usually only use about 3/4 of sauce because it always seems like too much for me**
Bake uncovered for 20 minutes
Sprinkle with shredded cheese and continue to bake uncovered for 10 minutes
Let stand 10 minutes before serving
Serve with Celery and chips

·          1 (12-ounce) bottle Frank’s Hot Sauce

·          1 (16-ounce) bottle blue cheese salad dressing

Recipe Number 12            Crockpot Mexican Lasagna

·          Taco meat

Mexican Lasagna, layer taco meat, diced tomatoes, cheese, salsa, corn tortillas sliced up into strips, chilies, (anything you'd put into tacos except lettuce)
Let it crock cook, don't stir
Really pretty good

Recipe Number 13                 Pork  Roast

·          3-4 pound butt pork roast

 One of the easiest things I do in my crockpot is a chuck roast or "butt" pork roast. Use a 3-4 pound roast, season all sides with salt, pepper, onion powder, garlic powder and any other seasonings you wish. Place in crock pot on low and cook for 5-7 hours. At the end of this time take meat out, drain off any liquids left in pot, shred meat and place back into crock on "warm" if you have this setting(if not low is OK too). I use this meat for burritos, tacos, barbecue etc. You can add any sauce to it you and your family like or leave it plain, it's good either way.

Recipe Number 14                New England Boiled Dinner

·         Ham

However much of veggies you need...whole ham, whole potatoes/carrots/onions/celery cut up the turnip as it takes much longer to cook and I usually quarter the cabbage.
I've also seen it done with corned beef.

 

Note from Claraine:  New England boiled dinner is my family's favourite dinner. My DM always made it and if there was enough left for the next day. It was purely accidental. LOL. I don't use a ham but a "Cottage Roll" which is pickled pork. It is getting more and more difficult to get as a lot of people don't know what to do with it. It is so great. It is like a ham but different.
